Quiche Lorraine

Servings: 4
Preheat: 375
Prep Time: 1 hour
Source: From Julia Child’s Kitchen

Ingredients:

Pate Brisee, pre-baked in an 8-9″ pie shell
5 or 6 thick slices bacon, cooked and crisp
3 large eggs
1/4 tsp salt
pinches of pepper and nutmeg
1/2 C heavy cream
1 1/2 Tbsp butter

Directions:

Crumble bacon into the bottom of the pastry shell. Beat up the filling to be sure all is blended and pour enough into the shell to come 1/4 inch from its rim at its lowest point. It is better to use too little than too much, since any overfill will swell up and spill a large part of your custard into the over. Hold the butter over the top of the quiche, cutting it into quart-inch bits and dropped them on the surface.

Place the quiche in the pre-heated oven and set your timer for 15 minutes. Normally the quiche mixture will slowly begin to set, rising about double as it does so; when has risen completely, in 30-35 minutes, and the top is nicely browned, it is done.

1 8- to 9-ounce turnip, peeled, cut into 1/2-inch pieces
1 large carrot, peeled, cut into 1/2-inch pieces
1 1/2-ounce package dried porcini mushrooms*
1 1/2 teaspoons dried thyme
3/4 teaspoon ground cumin
1/2 teaspoon ground black pepper
1 141/2-ounce can vegetable broth
1 cup water
1 cup whipping cream
8 ounces fresh shiitake mushrooms, stemmed, caps diced
1 cup frozen peas
1/4 cup chopped fresh chives
1 tablespoon all purpose flour

Biscuit topping

2 cups all purpose flour
1 tablespoon baking powder
1 teaspoon salt
1/4 cup chopped fresh chives
6 tablespoons chilled unsalted butter, cut into 1/2-inch pieces
2 large eggs
1/2 cup whole milk

Directions
For filling:
Melt 2 tablespoons butter in heavy large pot over medium-high heat. Add onion and sauté until deep golden, about 7 minutes. Add next 7 ingredients and stir 1 minute. Add broth and 1 cup water; bring to boil. Reduce heat, cover and simmer until vegetables are almost tender, about 10 minutes. Stir in cream, shiitake mushrooms, peas and chives. Season to taste with salt. Bring mixture to simmer. Mix remaining 1 tablespoon butter and flour in small bowl to blend. Stir into vegetable mixture; simmer until mixture thickens slightly, about 5 minutes. Divide vegetable mixture among six 2-cup soufflé or baking dishes; set aside. (Can be prepared 1 1/2 hours ahead. Let stand at room temperature.)

For biscuit topping:
Preheat oven to 425°F. Sift flour, baking powder and salt into bowl. Stir in chives. Add butter; rub in with fingertips until mixture resembles coarse meal. Add eggs and milk and stir until soft moist dough forms.
Turn dough out onto generously floured surface. Knead gently just to combine. Divide dough into 6 equal pieces; pat out each piece to 31/2-inch round. Place 1 dough round atop vegetable filling in each dish (some filling will show around edges). Place dishes on large baking sheet. Bake until topping is golden and vegetable mixture is heated through, about 18 minutes. Let stand 5 minutes. Serve hot.

Black Bean Tart with Chili Crust

Servings: —
Preheat: 350°
Source: Gourmet January 1996

Ingredients
For crust
1 1/4 cup all-purpose flour
1 tsp ground cumin
1 tsp chili powder
1 tsp paprika
1/2 tsp salt
1 stick (1/2 cup) chilled unsalted butter, cut into bits
2 Tbsp ice water
raw rice for weighting shell
For filling
1/2 lb dried black beans, picked over, or 3 cup canned black beans, rinsed and drained
1 bay leaf
1 med red onion, chopped
2 Tbsp sour cream
1 Tbsp vegetable oil
a 10 oz pkg frozen corn, thawed
1 red bell pepper, chopped (ab 1 cup)
1/2 cup fresh coriander sprigs, washed well, spun dry, and chopped
1 1/2 cup coarsely grated Monterey Jack (ab 6 ounces)
2 fresh jalapeño chilies, seeded and chopped fine (wear rubber gloves)
1/2 cup chopped scallions (ab 2)
For lime sour cream:
1 cup sour cream
2 tsp fresh lime juice, or to taste

Directions
Make crust: In a bowl with a pastry blender or in a food processor blend or pulse together flour, spices, and salt until combined well. Add butter and blend or pulse until mixture resembles coarse meal. Add ice water and blend or pulse until incorporated and mixture forms a dough. Press dough evenly onto bottom and sides of a 10-inch tart pan with a removable fluted rim and chill 15 minutes, or until firm. Line shell with foil and fill with rice. Bake shell in middle of oven until edge is set, 8 to 10 minutes. Carefully remove foil and rice and bake crust 10 minutes more, or until golden. Cool crust in pan on a rack. Crust may be made 1 day ahead and kept at room temperature, covered loosely with plastic wrap.

Make filling: In a bowl soak dried beans if using in water to cover by 2 inches overnight and drain. In a large saucepan combine soaked beans, bay leaf, onion, and water to cover by 2 inches and simmer, uncovered, 1 to 1 1/4 hours, or until tender, adding more water if necessary. Drain beans, discarding bay leaf, and cool. In a food processor purée 1 cup cooked or canned beans with sour cream until smooth and season with salt and pepper. In a skillet heat oil over moderately high heat until hot but not smoking and sauté corn with salt and pepper to taste, stirring, about 2 minutes. Cool corn. In a large bowl stir together corn, whole beans, bell pepper, coriander, Monterey Jack, jalapeños, and scallions and season with salt and pepper. Spread bean purée evenly onto crust and mound with remaining filling, pressing gently. Bake tart in middle of oven about 20 minutes, or until hot and cheese is melted. Let tart cool in pan on a rack 15 minutes. Remove rim of pan and serve tart warm or at room temperature with lime sour cream.

Make lime sour cream: In a bowl whisk sour cream and lime juice with salt and pepper to taste. Sauce may be made 1 day ahead and chilled, covered. Makes about 1 cup.
