Chewy Brownies

Servings: 16
Added flour helps to give these brownies their chewiness. It’s important not to over bake these or they’ll dry out.

Ingredients
4 oz (8 Tbs.) unsalted butter; more for the pan
4 oz unsweetened chocolate
1 ½ cup sugar
Scant ¼ tsp salt
2 tsp vanilla extract
2 lg eggs, at room temp
4 ½ oz (1 cup) flour
2 Tbsp natural cocoa (not Dutch-processed)

Directions
Position an oven rack on the middle rung. Heat the oven to 350°F. Butter an 8-inch square pan, line the pan bottom with parchment (or waxed paper), and then butter the parchment. In a double boiler over simmering water, melt the butter and chocolate. Remove the pan from the heat; cool slightly. Stir in the sugar, salt, and vanilla. Mix in the eggs, one at a time, stirring each time until blended. Add the flour and cocoa; beat until incorporated and the mixture is smooth, 30 to 60 seconds. Scrape the batter into the prepared pan and bake until the top is uniformly colored with no indentation and a toothpick inserted in the middle comes out almost clean, with a few moist crumbs clinging to it, 35 to 45 min. Set the pan on a rack until cool enough to handle. Run a paring knife around the inside edge of the pan and then invert the pan onto a flat surface and peel off the parchment. Flip the baked brownie back onto the rack to cool completely. Cut into squares with a sharp knife.

Yields sixteen 2-inch squares.

Ingredients
Vegetable cooking spray
1 1/2 cup (7 1/2) oz unbleached all-purpose flour
1 tsp baking powder
1/2 tsp salt
12 Tbsp (1 1/2 sticks) unsalted butter, melted and cooled
1 1/2 cup (10 1/2 oz) firmly packed brown sugar
2 lg eggs
1 1/2 tsp vanilla
1/2 cup semisweet chocolate chips
1/2 cup white chocolate chips
1 cup pecans, toasted and coarsely chopped

Directions
Adjust an oven rack to the middle position and heat the oven to 350°. Line a 13- by 9-inch baking pan with 2 pieces of foil. Coat the foil-lined pan with vegetable cooking spray. In a medium bowl, whisk the flour, baking powder and salt together. Set aside. In a medium bowl, whisk the melted butter and brown sugar together until combined. Add the eggs and vanilla and mix well. Using a rubber spatula, fold the dry ingredients into the egg mixture until just combined. Do not over mix. Fold in the semisweet and white chocolate chips and the nuts, and turn the batter into the prepared pan, smoothing the top with a rubber spatula. Bake until the top is shiny and cracked and feels firm to the touch, for 22 to 25 minutes. Place the pan on a rack and let cool completely. Cut into 1 1/2- by 2-inch bars. Makes 36 bars.
